Hidden for centuries underground before being excavated and restored over the past 70 years, Jerash reveals a fine example of the grand formal and provincial Roman urbanism that is found throughout the Middle East. You will then stop for lunch at the Lebanese House. The menu here (as its name implies) is decidedly Lebanese. Enjoy a wide range of mouthwatering mezzas (appetizers) and delicious salads organically grown in the garden surrounding you.  Continue to the Desert Castles, beautiful examples of both early Islamic art and architecture. Their fine mosaics, frescoes, stone and stucco carvings and illustrations, are inspired by the best in Persian and Greco-Roman traditions. This evening you will have dinner and overnight at Azraq Lodge, where the staff members are from local Bedouin, Chechen, and Druze communities. They provide a variety of Chechen home cooked food and delights, such as Manteesh. This dish consists of tasty, meat-filled dumplings, steamed and then served warm with fresh vegetables.
